The COS-20 puts three modes of cooking in the oven: steam, hot- air/convection and combi - a technology that combines hot air and steam to create a unique cooking environment. Cooking in Combi mode reduces shrinkage (and food cost), yielding a juicier product at a reduced cooking time. It's perfect for rethermalizing, too. And the other modes are engineered to deliver the best results for foods like steam-cooked vegetables, shellfish, breads, pastries and more. You can bake, roast or steam, choosing the mode that's best for the product - all without worrying about
flavor transfer. Plus, the transport cart design means continuous loading, and increased capacity, efficiency and productivity. It's maximum flexibility in a minimal footprint, so get three cooking modes in one powerful oven:

Floor/roll-in model. Pan capacity (14) 18"X26" bake pans or (28) 12"X20"X2 1/2" steam table pans. Complete with TC-14 transport cart with 26 shelf positions, 10 wire shelves, vented drain assembly, water pressure regulator, cord & plug, hose and spray assembly and pressure spray bottle. Universal pan/rack supports optional at no extra charge. Gas Fired.
